It is important to always pressure can raw beef to make sure that all the botulism spores are eliminated.<\/h5>\n<p>You will need about 60 minutes to use as preparation time and 100 minutes for pressure canning<\/p>\n<p><strong>Mid-Expert Level Expertise<\/strong><\/p>\n\n\n\n\n\n<h2>Ingredients<\/h2>\n\n<p>4 to 5 lb beef stew meat, cut into 1 1\/2-inch cubes<\/p>\n<p>1 Tbsp vegetable oil<\/p>\n<p>12 cups cubed and peeled potatoes (about 12 medium)<\/p>\n<p>8 cups sliced \u200b\u200bcarrots (about 16 small)<\/p>\n<p>3 cups chopped celery (about 5 stalks)<\/p>\n<p>3 cups chopped onion (about 4 small)<\/p>\n<p>1 tsp thyme<\/p>\n<p>1\/2 tsp pepper<\/p>\n<p>Water<\/p>\n<a href=\"https:\/\/amzn.to\/41GkSmo\">1-1\/2 Tbs Pickling\/ Kosher Salt, optional<\/a>\n<a href=\"https:\/\/amzn.to\/4gJohoN\"> Vinegar <\/a>\n<p><br><\/p>\n<h2>Equipment<\/h2>\n<a href=\"https:\/\/amzn.to\/4gm0341\"> Sharp Knife <\/a>\n<a href=\"https:\/\/amzn.to\/3DpX4Jo\"> Kitchen Cutting Board<\/a>\n<a href=\"https:\/\/amzn.to\/4a2FXK9\"> Pressure Canner <\/a>\n<a href=\"https:\/\/amzn.to\/49Kf2T8\"> 16 x 500ml\/ 16oz (Pint) Jars <\/a>\n<a href=\"https:\/\/amzn.to\/4gPbJfy\"> 7 x 1L\/ 32oz (Quart) Jars <\/a>\n<a href=\"https:\/\/amzn.to\/3P2ID0i\"> Headspace Measuring Tool <\/a>\n<a href=\"https:\/\/amzn.to\/49INg9z\"> Cooking Apron <\/a>\n<a href=\"https:\/\/amzn.to\/3Do8X2t\"> Dish Cloths <\/a>\n<a href=\"https:\/\/amzn.to\/3ZIwP8I\"> Paper Towel <\/a>\n<a href=\"https:\/\/amzn.to\/3VJKJpK\"> Permanent Marker <\/a>\n<a href=\"https:\/\/amzn.to\/4gISTGO\"> Propane Stove &#8211; optional <\/a>\n<a href=\"https:\/\/amzn.to\/4fsZl3K\"> Pressure Canner rack- optional <\/a>\n\n\n\n<h2>Directions<\/h2>\n\n<p>Prepare pressure canner. Heat jars in simmering water until ready for use. Do not boil.&nbsp; Wash lids in warm soapy water and set bands aside.<\/p>\n<p>Brown meat in oil in a large saucepot. Add vegetables and seasonings to browned meat. Cover with boiling water. Bring stew to a boil. Remove from heat. (<em>You can elect to skip the browning of the meat and raw pack meat into the base of the jars, pack raw veggies and fill with cold water <\/em>)<\/p>\n<p>Ladle hot stew into hot jars leaving 1 inch headspace. Remove air bubbles. Wipe rim. Center hot lid on jar. Apply band and adjust until fit is fingertip tight.<\/p>\n<p>Process filled jars in a pressure canner at 10 pounds pressure 1 hour and 15 minutes for pints and 1 hour and 30 minutes for quarts, adjusting for altitude.&nbsp;<\/p>\n<p>Turn off heat: cool canner to zero pressure. Let stand 5 more minutes before removing the lid. Cool jars in canner 10 minutes. Remove jars and cool.<\/p>\n<p>Check lids for seal after 24 hours.
